4 (1 lb) brook trout, whole, cleaned . 2 tbsps sesame seeds . 1/4 c fresh lemon juice . 1 tbsp hot pepper sauce, such as Tabasco . 2 tbsps vegetable oil . 1/2 tsp salt . 2 tbsps butter or margarine, melted . 1 tsp fresh ginger, grated . 2 tbsps fresh parsley, sliced

Step #1 Prepare your grill for grilling. Step #2 In a shallow dish, mix the lemon juice, butter, oil, parsley, hot sauce, sesame seeds, ginger & salt. Step #3 With a fork, pierce the skin of each fish in several places. Step #4 Roll the fish in the lemon juice mixture to coat thoroughly. Step #5 Leave the fish in the marinade, cover the dish, & put in the fridge for 30 mins to 1 hr, turning the fish every once in awhile. Step #6 Remove the fish, & place them in a hand-held, reserving the marinade, hinged grill (I use that method because I'm terrible at turning the fish on the grill without mangling them). Step #7 Brush the fish with the marinade. Step #8 Cook about 4 inches from the hot coals for 5 mins. Step #9 Turn, brush with marinade, & cook for 5 mins longer, or until the flesh appears opaque & flakes easily. Enjoy the Hot Grilled Trout recipe
